“After burning my first batch of pork when the Tassie winter damp turned my smoke to white tears, I learned that dry wood and patience matter more than fancy rigs.”

Cold Smoke vs Hot Smoke: The Only Two Ways

Cold smoke (below 30°C): Just for flavour. No cooking. You're not cooking meat, you're just making it smell nice. Use it on cheese, bacon, or ham. If you're doing cold smoke, keep it under 30°C or you're just cooking it. Don't be a dick.

Hot smoke (60-100°C): This is the real deal. You're cooking meat. You need to hit the right temp to kill bacteria and not get food poisoning. Forget the "low and slow" nonsense if you're off-grid – you need to get it done right, not slow.

Safe Temperatures: Don't Get Sick

Food poisoning in the bush? Not happening. Here's the non-negotiables:

WARNING: If your smoker never hits 65°C, you're not smoking meat – you're making a biohazard. Stop. Fix it. Or eat something else.

Off-Grid Tips: No Power, No Problem

Off-grid means no fancy electric smokers. Here's how to do it right:

Aussie Suppliers & Pricing (indicative prices)

BBQ Australia (Sydney/Melbourne): Bushmaster smoker box – $65. Reliable, made here. Get it at their store or online. No shipping fees if you pick up.

The Meat Shop (Nationwide): Eucalyptus wood chips – $18 for 2kg. Available at all stores. Don't buy the $30 "premium" stuff – it's the same.

Local Hardware (Bunnings/Woolworths): Digital thermometer – $22. Get the "Thermoworks" model. Cheaper than the $50 "pro" ones.

That's it. No fluff. If you're off-grid, you don't have time for mistakes. Hit the right temp, use local wood, and don't gamble with food safety. Smoke smart, eat well, and don't get sick in the bush.

⚠️ SAFETY WARNING: Working with electrical systems, structural modifications, or gas installations carries inherent risks. If you are not confident in your abilities, always engage a licensed professional.
